Organic compost is more acidic than normal compost, which is good for your organic vegetables in your garden. The land in Israel is often very alkaline and that makes it difficult for plants to take iron from the soil. If the new leaves are yellowing or pale green, while the other leaves are darker it means that your plants prefer a lower soil-pH and/or add more iron to the soil.
